THE GALESTRO
Galestro is a friable, metamorphic marl—a rock that refuses to stay solid. Exposed to the elements, it naturally weathers and fractures into laminar, slate-like flakes. As these shale-like layers break down, they degrade into noble clays (argillite). This is the vineyard’s self-regulating mechanism. The rock provides drainage, but the degrading clay captures just enough moisture to keep the vine alive during the scorching Tuscan July, slowly releasing hydration to the roots without bloating the grapes. Galestro is the source of Gigiò’s aromatic “lift.” It is responsible for the ethereal high notes— the dried herbs, the graphite, and the smoke—that hover above the fruit
