Pet'Golò

Description

Pet'Golò is a PET-NAT (Pétillant Naturel), or naturally sparkling rosé wine. Made according to the "méthode ancestrale", fermentation is allowed to continue in bottle with absolutely no additions, no sugar and no sulfites, giving rise to delicate bubbles and a slight opaque unfiltered appearance. The resulting wine is all natural, just pure fruit, with delicious bubbles and a lovely antique rose color!

Vineyard: La Noce vineyard on the property of POGGIO LA NOCE, Fiesole.

Elevation: 800-1000 feet

Orientation: South - South West facing

Vineyard Size: 6 acres

Average age of the vines: 14 and 20 years

Soil: Predominantly calcareous marl with alberese and galestro strata.

Training System: Guyot

Varietals: Sangiovese and Canaiolo

Harvest: Beginning of September, manual harvest.

Fermentation: The grapes are handpicked roughly three weeks before phenological maturation and the clusters are pressed whole immediately. Fermentation is the traditional “méthode ancestrale”, where fermentation starts in temperature controlled stainless steel vats using indigenous yeasts and is then interrupted to allow the wine to be bottled without the addition of secondary yeasts or sugars (or anything else!). Primary fermentation then continues in the bottle thus giving the wine its small bubbles and effervescence, with a natural deposit of the lees.

Alcohol: 12% to 12.5%

Potential Cellaring: To be drunk the same year.

Tasting notes: Color: Cloudy opaque antique rose. Nose: delicate scent of wild strawberries, citrus fruit, white peach. Palate: Creamy, delicate bubbles, with a balance of fruitiness and fresh acidity.
